See some great routes in the Eifel region. I love riding in the Eifel. The climbs are long but mostly not too steep, although you can meet some “walls” there as well. The roads are endless and very well maintained. Most gravel is easy to ride and the forrest roads are beautiful.
If you want to go bikepacking in the Eifel, you can find a lot of shelters where you can even camp without tent. Be aware though that not all shelters are as suitable, so do a little preparation before the ride.
